OOWC explores sensory qualities of olive oil

Olive oil is also characterized by its sensory attributes that make it unique thanks to its flavor, texture, smell, color or temperature, which change depending on the olive variety. 

For this reason, the Olive Oil World Congress (OOWC), which will take place from June 26 to 28, 2024 in Madrid, has in its first edition a block of papers entitled 'Sensory Properties' in which prestigious national and international speakers will analyze one of the most researched topics by industry professionals.

To this end, the congress will feature the participation of Plácido Pascual Morales, member of the Tasting Panel of the Agrifood Laboratory of Córdoba, who will speak on 'Sensory analysis and its importance to determine VOO quality’. "The present and future of virgin olive oil moving towards a tastier and healthier world, don't miss it!", he points out.

Hermenegildo Cobo Martínez, ICEX regional director in Seville, will address 'Borderline olive oils ', who states that "attending the World Olive Oil Congress provides a special opportunity to discover the latest trends, research and advances in the olive oil sector. The closing speaker of this block will be Francisco de Paula Rodríguez García, technical advisor of Junta de Andalucía, with his presentation on 'Uncertainties in organoleptic assesment', who assures that "the congress makes known the excellence of a unique food and the scientific advances that make it possible".
