The Instituto de la Grasa (IG-CSIC) will hold its 40th Members' Assembly on 5 and 6 November, a scientific and technical meeting now reaching its fortieth edition. It will take place in the Institute's Assembly Hall, on the Pablo de Olavide University campus in Seville. Registration is free of charge.

Specialising in lipids and related food compounds, with particular focus on vegetable oils, table olives and the full use of co-products and by-products, the Instituto de la Grasa is an international reference centre that works in close collaboration with industry. This commitment to knowledge transfer also shapes the programme of the assembly, which combines the presentation of research projects with market and industry perspectives.

Following the opening, the first talk will be given by Rafael León, of AGROPRO-SOVENA, who will analyse trends, challenges and prospects in the oils market.

Sustainability and health

The first day will then focus on two main areas. On sustainability and the circular economy, Soraya Zahedi Díaz will present the biorefinery of livestock slurry and alperujo (olive pomace); Guillermo Rodríguez Gutiérrez will discuss how olive grove by-products can work together to add value to the olive pomace sector; and Rocío Rodríguez Arcos will introduce the ASPARSUS project, on producing bioactive compounds through hydroponic asparagus cultivation.

In the field of nutrition and health, José Mª Castellano Orozco will present the OLTRAD study, on olive oil enriched with oleanolic acid in the treatment of type 2 diabetes, and Sara Jaramillo Carmona will speak about the role of oleic acid in human bone marrow stem cells. Two short briefings will round off the morning: Alicia Sánchez García will present the new equipment of the Mass Spectrometry Service, and Rosario Marín Díaz the Institute's communication and social impact strategies.

From research to market

The day will close with a round table on success stories in technology transfer, moderated by Alicia Vives Gutiérrez, of ORIVA. Taking part will be Óscar Rodríguez Vargas (Grupo Agrosevilla), Ana Marín Gordillo (TAFIQS in Foods), Manuel Sañudo Mazorra (Maslina International Trade), Honorio Vergara Domínguez (AGOLIVES) and Críspulo Gallego Montes (Fresenius Kabi-University of Huelva).

Quality, biotechnology and table olives

The second day will open with authenticity, quality and contaminants in the lipid industry. Raquel B. Gómez-Coca will review analytical advances against fraud and the situation of MOSH-MOAH in olive oil and its derivatives; Mª Teresa Morales Millán, of the University of Seville, will present new spectroscopic tools to assess quality loss caused by photo-oxidation in virgin olive and avocado oils; and Francisco Javier Hidalgo García will explain the role of quinones in acrylamide formation and in the removal of biogenic amines in olives.

The session on plant biotechnology, functional foods and food safety will feature José Antonio Aznar Moreno, who will discuss camelina as a route to sustainable fat production; José Manuel Martínez Rivas, on how oil is stored in the cells of the olive pulp; Mª Victoria Ruiz Méndez and Justo J. Pedroche Jiménez, with the Flexizyme project on obtaining fatty amines from agri-food by-products; María del Rosario Serra, on phyllobilins as a new group of bioactive compounds; and Elio López García, on microbiological quality and safety in table olive companies. David Verano Cañaveras, of SGS, will bring the certification perspective, addressing foreign bodies and precautionary allergen labelling.

Table olives will take centre stage in the final scientific session, with the reformulation of pepper-paste-stuffed olives to make them more nutritious and lower in salt, presented by Antonio López López, and the scientific evidence supporting them as a healthy food, by Francisco Noé Arroyo López. The closing session will follow.

Industry support

The assembly is sponsored by the Spanish Sunflower Association (AEG) and has the collaboration of AEG, AFOEX, ANEO, ANIERAC, ASAJA, ASEMESA, ASOLIVA, Cooperativas Agro-alimentarias, COAG, the Patrimonio Comunal Olivarero Foundation, INFAOLIVA and UPA.
